Vegetable Leczo :)
For the meat lovers, you can add Spanish sausage - chorizo if you like, whenever you want to, even on a plate :) Enjoy!

Here's the vegetable leczo recipe in English:
6 zucchinis - diced.
4 onions + 1 head of garlic - peeled, chopped, lightly sautéed over medium heat in heated oil.
Add 3 bell peppers chopped finely after 5 minutes.
Do not cover!
500g of mushrooms + 2 eggplants diced. (Remove the stems and tops of the eggplants and discard.)
Finally, add 4 tomatoes or, 2 tomato cans and tomato passata, along with spices, and add zucchinis, also diced - you can peel them, but it's not necessary.
Also, add all the spices: a tablespoon of salt, sweet paprika, smoked paprika, and a teaspoon of pepper. If you like spicy leczo, you can also add a flat teaspoon of chilli or cayenne pepper.
Pour in a full glass of tomato passata. You can use passata from a bottle or carton. It should be passata - not concentrate. Stir the leczo and cook until all the vegetables are soft but not falling apart. My leczo is usually ready in a total of 40 minutes from heating the pot with oil.
Since you're adding a lot of garlic and peppers to the leczo, there's no need to add sugar, which often appears in recipes.
