Ingredients:
4 medium-sized potatoes, peeled and diced
1 cup of cooked turkey, shredded
1 medium onion, finely chopped
2 cloves of garlic, minced
2 cups of fresh spinach leaves
2 cups of vegetable broth
1 cup of heavy cream
2 tablespoons of olive oil
1 teaspoon of dried thyme
Salt and pepper to taste
Instructions:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
Add the diced potatoes to the pot and stir well to coat them with the onion and garlic mixture. Cook for a few minutes until the potatoes start to soften slightly.
Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the potatoes are tender.
Using an immersion blender or a regular blender, puree the soup until smooth and creamy. If using a regular blender, be sure to blend in batches and exercise caution while handling hot liquids.
